Ingredients for Chocolate Zucchini Cake
- 3 Eggs
- 2 cup Sugar
- 1 cup salad oil
- 2 oz baking chocolate, melted
- 2 cup zucchini, finely grated
- 1 tsp vanilla
- 3 cup flour
- 1 tsp salt
- 1 tsp cinnamon
- ¼ tsp Baking Powder
- 1 tsp baking soda
- 1 cup chopped walnuts (optional)
Instructions for Making Chocolate Zucchini Cake
- Preheat oven to 350°F (180°C)
- Beat eggs until foamy
- Add sugar and oil and beat
- Add chocolate, zucchini, and vanilla
- In a separate bowl combine flour, salt, cinnamon, baking powder and baking soda and add to chocolate mixture
- Mix thoroughly
- Add nuts (but only if you want to)
- Pour into a Bundt pan or 2 loaf pans that have been greased and floured
- Bake at 350° for 35 to 40 minutes or until a toothpick inserted in the center of the cake comes out dry
Chocolate Icing Recipe
- ½ cup (1 stick) Butter or Margarine
- 2 Tbsp Cocoa
- ¼ cup Milk
- 3½ cups Powdered Sugar
- 1 tsp Vanilla
Heat butter, cocoa, and milk to a boil stirring constantly. Once it’s boiling, remove it from the heat. Then mix in the powdered sugar and vanilla.
For smoother frosting, sift the powdered sugar into the cocoa mixture to remove clumps.
