Makes about 66 cookies about 2½ inches in diameter
Ingredients for Zucchini Cookies
- 1 cup Shortening
- 2 cup Sugar
- 2 Eggs
- 2 cup Zucchini (grated)
- 2 tsp Vanilla
- ¾ tsp Salt
- 4 cup Flour
- 4 tsp Cinnamon
- ½ tsp Nutmeg
- 2 tsp Baking Powder
- 2 tsp Baking Soda
- 1 cup Raisins (optional)
- 1 cup Nuts (optional)
Instructions for Making Zucchini Cookies
- Preheat oven to 375°F (190°C)
- Cream shortening, sugar, and eggs and add zucchini and vanilla
- Sift together salt, flour, cinnamon, nutmeg, baking powder, and baking soda
- Stir dry ingredients into the creamed mixture and mix well
- Stir in raisins and nuts (if desired)
- Bake for 8 to 11 minutes (the cookies will be light in color)
- Frost with Cream Cheese Frosting (if desired)
Cream Cheese Frosting Recipe
- 1 (8 oz.) pkg. Cream Cheese
- ½ cup Butter
- 2 tsp Vanilla
- 4 or 5 cups sifted Powdered Sugar
Soften the cream cheese and butter. Mix cream cheese, butter, and vanilla. Mix in the powdered sugar a little at a time until it reaches your desired thickness.
