Ingredients for Zucchini Cookies

  • 1 cup Shortening
  • 2 cup Sugar
  • 2 Eggs
  • 2 cup Zucchini (grated)
  • 2 tsp Vanilla
  • ¾ tsp Salt
  • 4 cup Flour
  • 4 tsp Cinnamon
  • ½ tsp Nutmeg
  • 2 tsp Baking Powder
  • 2 tsp Baking Soda
  • 1 cup Raisins (optional)
  • 1 cup Nuts (optional)

Instructions for Making Zucchini Cookies

  1. Preheat oven to 375°F (190°C)
  2. Cream shortening, sugar, and eggs and add zucchini and vanilla
  3. Sift together salt, flour, cinnamon, nutmeg, baking powder, and baking soda
  4. Stir dry ingredients into the creamed mixture and mix well
  5. Stir in raisins and nuts (if desired)
  6. Bake for 8 to 11 minutes (the cookies will be light in color)
  7. Frost with Cream Cheese Frosting (if desired)

Cream Cheese Frosting Recipe

  • 1 (8 oz.) pkg. Cream Cheese
  • ½ cup Butter
  • 2 tsp Vanilla
  • 4 or 5 cups sifted Powdered Sugar

Soften the cream cheese and butter. Mix cream cheese, butter, and vanilla. Mix in the powdered sugar a little at a time until it reaches your desired thickness.
